CHICKEN KA ACHAAR || ACHAAR RECIPES BY AYESHA'S WORLD


  • PREPARATION TIME: 10 Mins
  • COOKING TIME: 20-25 Mins
INGREDIENTS:
  1. Boneless Chicken - 1/2 kg (Cubes)
  2. Green Chillies - 6-7 (Slit & take out seeds)
  3. Turmeric Powder - 1/2 tsp
  4. Red Chilli Powder - 1 tbsp
  5. Coriander Powder - 1 tbsp
  6. Roasted Cumin Powder - 1 tbsp
  7. Achar Masala - 1 tbsp
  8. White Vinegar - 3 tbsp
  9. Black Pepper - 1/2 tsp
  10. Fennel seeds - 1 tbsp
  11. Coriander seeds - 1 tbsp
  12. Dry Red Chillies - 2
  13. Garlic Cloves - 10 - 12
  14. Curry Leaves - 2 Sprig
  15. Ginger-Garlic paste - 1/2 tsp
  16. Carom seeds - 2 Pinch
  17. Nigella seeds - 2 Pinch
  18. Salt - To Taste
  19. Oil - 250 gms
METHOD:
  1. Take a bowl. Add Chicken, all dry masalas, salt & mix well. Keep aside for 1 1/2 hr for marination.
  2. Take a plate, add Fennel, Coriander Seeds, Black Pepper, dry roast & grind them in fine powder.
  3. Heat oil in a pan. Put marinated chicken & cook for 10-15 mins. Stir alternately.
  4. Add Curry Leaves, Green Chillies, Vinegar & stir. Cover & cook for about 5-6 mins.
  5. Turn off the flame, add Achar Masala & keep aside.
  6. Heat oil in a pan. Add Carom & Nigella seeds, Garlic Cloves, Curry Leaves, Whole Dry Red Chillies, let the Garlic turn red.
  7. Add Red Chilli Powder 1/2 tsp, Turmeric Powder 1/2 tsp.
  8. Turn off the flame, Add the tempering in the Chicken & put the lid.
  9. Store in a jar & keep it in a refrigerator.
