EPISODE # 178 TURAI GOSHT || RIDGE GOURD WITH CHICKEN || TURAI MOURG RECIPE PREPARATION TIME: 15 Mins COOKING TIME: 15-20 Mins SERVINGS: 3-4 INGREDIENTS: Ridge Gourd - 200 gms Chicken - 200 gms Onion - 1/2 (Chopped) Tomato - 1 (Chopped) Turmeric powder - 1/2 tsp Red chilli powder - 1 tsp Ginger garlic paste - 1 tsp Green coriander - few Salt - to taste Oil - 2 Spoon METHOD: Take a cooker. Put chicken, turmeric powder, onion, salt to taste & saute. Add oil & saute. Add ginger garlic paste & saute. Add tomato, red chilli powder & mix. Add ridge gourd & mix well. Add green coriander & mix. Put the lid, bring the cooker on full pressure on high flame & cook until 2-3 whistles. Cook for another 5-6 mins until the water dries in the cooker. EPISODE # 177 CHICKEN HARIYALI KABAB || HARA CHICKEN || HARA BHARA CHICKEN KABAB PREPARATION TIME: 15 Mins COOKING TIME: 20-25 Mins SERVINGS: 3-4 INGREDIENTS: Chicken - 1/2 kg (Pounded with hammer or okhli) Onion - 1 (Cut in cubes) Ginger garlic paste - 1/2 tsp Green chilli - 6-7 Lemon - 1 or 1/2 Green coriander - few Mint leaves - few Salt - to taste Oil - 1 Spoon METHOD: Take a mixer jar. Put green coriander, green chilli, mint leaves & grind in a fine paste. Add ginger garlic paste, onion & grind in a paste. Add salt, grounded paste & mix. Add lemon, oil & mix well. Heat a pan. Put chicken pieces. Cover & simmer for 5 mins. Gently flip & shallow fry. Fry until chicken turns golden brown. Serve hot with salad & green chutney. EPISODE # 175 MATAR PULAO || PEAS PULAO || MATAR WALE CHAWAL PREPARATION TIME: 05 Mins COOKING TIME: 15-20 Mins SERVINGS: 4-5 INGREDIENTS: Basmati Rice - 1 kg (soaked) Green peas - 1 Cup Cloves -3 Green cardamom - 2 Star Anise - 2 Bay Leaf - 2 Cinnamon stick - 2 Mace - 1 Cumin seeds - 1 tsp Shah jeera - 1 tsp Black pepper - 5-6 Lemon - 1/2 Green chilli - 4-5 Green coriander - few Almonds - few Pistachio - few Salt - to taste Ghee - 1 Spoon Oil - 1/2 Spoon METHOD: Heat Oil & Ghee in a patila. Add all spices & saute. Add dry fruits & saute. Add green peas & saute. Add green chilli & saute. Add water 1.5ltr & saute. Add salt to taste. Put the lid & cook until water boils. Add green coriander & mix. Add rice & mix. Add lemon & mix. Cover & cook on low flame. Cover & cook for another 5 mins.
