INGREDIENTS:
  1. Bitter Gourd - 7-8
  2. Cumin seeds - 1 tbsp
  3. Coriander seeds - 2 tbsp
  4. Fennel seeds - 1 tbsp
  5. Black pepper - 1/2 tsp
  6. Dry red chili - 5-6
  7. Lemon - 1/2
  8. Garlic cloves - 5-6
  9. Nigella seeds - 1/2 tsp
  10. Turmeric powder - 1/2 tsp
  11. Asafoetida - 1/4 tsp
  12. Oil - 1 1/2 tsp
  13. Salt - to taste
  14. Oil - for frying
METHOD:
  1. Slit the Bitter gourd & remove the seeds. Add turmeric powder 1 pinch, salt to taste & mix it on the Bitter gourd. Wash it thoroughly.
  2. Heat a pan. Add cumin, nigella, coriander, fennel, black pepper & dry roast. add dry red chili  & roast on low flame. Add garlic, asafoetida & mix well. Let it cool to room temperature.
  3. Take a mixer jar. Add the roasted masala & grind to a fine powder. Take out. Add turmeric powder, salt to taste, oil, lemon & mix well.
  4. Take an equal amount of the mixture & put it in the Bitter gourd. Take a thread & roll around the Bitter gourd.
  5. Heat oil in a pan. Put Bitter gourd one by one & let it fry on low flame. Gently flip & fry.
  6. After 3-4 mins add nigella seeds, cover & cook.
  7. Remove the threads & serve.
  8. Serve hot.
