Mutton Biryani

INGREDIENTS:
- Mutton (Cut into small pieces) - 1 Kg
- Oil - 1 Cup
- Vanaspati Ghee - 1 Cup
- Potatoes (Peeled and cut into equal half) - 1/2 Kg
- Onion (Sliced) - 1/2 Kg
- Tomato - 1/2 kg (chopped)
- Red Chilli Powder - 1 tbsp
- Coriander Powder - 2 tbsp
- Turmeric Powder - 1/2 tbsp
- Ginger-Garlic paste - 2 tbsp
- Garam Masala Powder - 1 tbsp
- Cumin seeds - 1 tbsp
- Caraway seeds - 1 tbsp
- Curd - 1/2 Kg
- Red food colour - 1 Pinch
- Kewra Essence - 2-3 Drops
- Kasuri Meethi - 1 tbsp
- Lemon - 3-4
- Green Chillies - 6-7
- Coriander leaves - 2 tbsp
- Mint leaves - 2 tbsp
FOR RICE:
- Water - 1 Ltr
- Basmati Rice - 1 Kg
- Green Cardamoms - 2
- Caraway and Cumin Seeds - 1/4 tsp
- Cloves - 3-4
- Cinnamon Stick - 2-3
- Bay leaves - 2-32tbsp
- Salt - To taste
METHOD:
FOR MARINATION:
- Grind together chillies, cumin, caraway seeds, mint leaves, coriander leaves.
- Rub ground paste into meat. Add all other ingredients for the marinade.
- Mix well and keep aside for 4 hours to marinade.
- In a large frying pan heat oil for about 5 minutes. Lightly fry potatoes.
- Fry onions till golden brown and crisp remove keep aside.
- Take a pressure cooker, add remaining oil and vanaspati ghee in it.
- Add Marinated Meat mix well close cooker. Cook it about 10-20 mins.
FOR RICE:
- Add water, salt, all spices and cooked Rice. When Rice cooked transfer Rice to a colander and drain. Keep aside.
- Take a large vessel to add cooked Meat in it.
- Layer with Potatoes, fried Onions, Green Coriander and Mint Leaves. Add lime juice.
- Add half of Rice over Meat spread Fried Onions. Mix Yellow Food Colour with milk.
- Add 2-3 drops of kewra essence on the Rice, now add leftover Rice again & sprinkle Fried Onions, Food Colour,
- Green Coriander and Mint Leaves over it.
- Cover the vessel with the cotton cloth and cook for 10-15 mins on low flame 10-20 mins
- Serve hot with Onion Salad or Raita.

Biryani is a very famous Cuisine in Muslim Culture. There are much types of Biryani like Mutton Biryani, Chicken Biryani, Fish and Prawns Biryani. You don't need to be an expert to make a perfect Biryani.

5- Always use a thick vessel for cooking.
