MUTTON BIRYANI RECIPE || BIRYANI RECIPE BY AYESHA'S WORLD



  • PREPARATION TIME: 20 Mins
  • COOKING TIME: 30-35 Mins
  • SERVINGS: 4-5

INGREDIENTS:
  1. Mutton (Cut into small pieces) - 1 Kg
  2. Oil - 1 Cup
  3. Vanaspati Ghee - 1 Cup
  4. Potatoes (Peeled and cut into equal half) - 1/2 Kg
  5. Onion (Sliced) - 1/2 Kg           
FOR MARINATION:
  1. Tomato - 1/2 kg (chopped)
  2. Red Chilli Powder - 1 tbsp
  3. Coriander Powder - 2 tbsp
  4. Turmeric Powder - 1/2 tbsp
  5. Ginger-Garlic paste - 2 tbsp
  6. Garam Masala Powder - 1 tbsp
  7. Cumin seeds - 1 tbsp
  8. Caraway seeds - 1 tbsp
  9. Curd - 1/2 Kg
  10. Red food colour - 1 Pinch
  11. Kewra Essence - 2-3 Drops
  12. Kasuri Meethi - 1 tbsp
  13. Lemon - 3-4
  14. Green Chillies - 6-7
  15. Coriander leaves - 2 tbsp
  16. Mint leaves - 2 tbsp
FOR RICE:
  1. Water - 1 Ltr
  2. Basmati Rice - 1 Kg
  3. Green Cardamoms - 2
  4. Caraway and Cumin Seeds - 1/4 tsp
  5. Cloves - 3-4
  6. Cinnamon Stick - 2-3
  7. Bay leaves - 2-32tbsp
  8. Salt - To taste
METHOD:
FOR MARINATION:
  1. Grind together chillies, cumin, caraway seeds, mint leaves, coriander leaves.
  2. Rub ground paste into meat. Add all other ingredients for the marinade.
  3. Mix well and keep aside for 4 hours to marinade. 
  4. In a large frying pan heat oil for about 5 minutes. Lightly fry potatoes.
  5. Fry onions till golden brown and crisp remove keep aside.
  6. Take a pressure cooker, add remaining oil and vanaspati ghee in it.
  7. Add Marinated Meat mix well close cooker. Cook it about 10-20 mins.
FOR RICE:
  1. Add water, salt, all spices and cooked Rice. When Rice cooked transfer Rice to a colander and drain. Keep aside.
  2. Take a large vessel to add cooked Meat in it
  3. Layer with Potatoes, fried Onions, Green Coriander and Mint Leaves. Add lime juice.
  4. Add half of Rice over Meat spread Fried Onions. Mix Yellow Food Colour with milk.
  5. Add 2-3 drops of kewra essence on the Rice, now add leftover Rice again & sprinkle Fried Onions, Food Colour, 
  6. Green Coriander and Mint Leaves over it.
  7. Cover the vessel with the cotton cloth and cook for 10-15 mins on low flame 10-20 mins
  8. Serve hot with Onion Salad or Raita.

                  Biryani is a very famous Cuisine in Muslim Culture. There are much types of Biryani like Mutton Biryani, Chicken  Biryani, Fish and Prawns Biryani. You don't need to be an expert to make a perfect Biryani.

    Here I would like to give you some tips on how to make a perfect Mutton Biryani.
  • Tips:-
1- Cook marinated Meat in the pressure cooker to save the cooking time.
2- The Rice used should be of high- quality Basmati Rice.
3- Squeeze lime juice in boiling rice to reduce the starch of rice.
4- Add the good amount of salt.
5- Always use a thick vessel for cooking.
6- Cover the vessel with cotton cloth so that the heat doesn't escape.
