SUPER TASTY BAIGAN KA KHATTA SALAN || SALAN RECIPES BY AYESHA'S WORLD

INGREDIENTS:
  1. Brinjal - 8-10
  2. Onion - 1 (cut in cubes)
  3. Tomato - 2 (cut in cubes)
  4. Tamarind - 10 gms (soaked in water)
  5. Dry Coconut powder - 2 tbsp OR Coconut - 1/4
  6. Turmeric powder - 1/4 tsp
  7. Red chilli powder - 1 tbsp
  8. Coriander powder - 2 tbsp
  9. Jeera methi masala - 1 tsp
  10. Garlic cloves - 5-6
  11. Green coriander - 1/2 cup
  12. Salt - To taste
TEMPERING:
  1. Curry leaves - few
  2. Cumin and mustard seeds - 1tsp
  3. Dry red chillis - 2
  4. Oil - 2 spoons
METHOD:
  1. Take a mixer jar. Add coconut, garlic cloves, jeera methi masala, a little water & grind well.
  2. Add onion & grind. Take out.
  3. Add tomatoes in the same jar, & grind into a puree.
  4. Make a slit in Brinjals & fill grounded paste in brinjals.
  5. Take a plate. Add turmeric powder, red chilli powder, coriander powder, tomato puree & mix well.
  6. Heat oil in the cooker. Add the tempering. Add brinjals & all masalas mixed in the plate. Add 1/2 glass of water & simmer. for 5-6 mins.
  7. Add Tamarind water, salt to taste, water 1/3 glass & green coriander. Put the lid & bring the cooker on full pressure & cook till 2-3 whistles.
  8. Serve hot with plain rice, pulav, khichdi, baghara khana, roti & dosa.
