SUPER TASTY BAIGAN KA KHATTA SALAN || SALAN RECIPES BY AYESHA'S WORLD

- Brinjal - 8-10
- Onion - 1 (cut in cubes)
- Tomato - 2 (cut in cubes)
- Tamarind - 10 gms (soaked in water)
- Dry Coconut powder - 2 tbsp OR Coconut - 1/4
- Turmeric powder - 1/4 tsp
- Red chilli powder - 1 tbsp
- Coriander powder - 2 tbsp
- Jeera methi masala - 1 tsp
- Garlic cloves - 5-6
- Green coriander - 1/2 cup
- Salt - To taste
- Curry leaves - few
- Cumin and mustard seeds - 1tsp
- Dry red chillis - 2
- Oil - 2 spoons
- Take a mixer jar. Add coconut, garlic cloves, jeera methi masala, a little water & grind well.
- Add onion & grind. Take out.
- Add tomatoes in the same jar, & grind into a puree.
- Make a slit in Brinjals & fill grounded paste in brinjals.
- Take a plate. Add turmeric powder, red chilli powder, coriander powder, tomato puree & mix well.
- Heat oil in the cooker. Add the tempering. Add brinjals & all masalas mixed in the plate. Add 1/2 glass of water & simmer. for 5-6 mins.
- Add Tamarind water, salt to taste, water 1/3 glass & green coriander. Put the lid & bring the cooker on full pressure & cook till 2-3 whistles.
- Serve hot with plain rice, pulav, khichdi, baghara khana, roti & dosa.
