SAAG PURI || PURI BHAJI || ALOO PURI || BREAKFAST RECIPE

INGREDIENTS:
DOUGH FOR PURI:
- What flour - 2 cup
- Cumin seeds - 1 Pinch
- Carom seeds - 1 Pinch
- Semolina - 1 tbsp
- Chickpeas flour - 1 tbsp
- Green coriander - few
- Salt - to taste
- Ghee - 1 tbsp
FOR BHAJI:
- Potatoes - 3 Big (Boiled with a little salt)
- Onion - 1 Big (chopped)
- Tomato - 1 small (chopped)
- Turmeric powder - 1/4 tsp
- Coriander powder - 1 tbsp
- Garam masala powder - 1 Pinch
- Ginger garlic paste - 1 tsp
- Cumin, Mustard, Fenugreek seeds - 1 tsp
- Curry leaves - few
- Green chilli - 3-4
- Green coriander - few
- Oil - 2-3 tbsp
METHOD:
- Take a bowl. Add all ingredients & mix by adding water & knead the dough.
- Spread ghee on dough & knead the dough until once more. Transfer to another container or bowl & keep aside to rest.
- Mash potatoes.
- Heat oil in a cooking pot.
- Add cumin, mustard, fenugreek seeds & saute.
- Add onion & saute.
- Add green chilli & saute.
- Add ginger-garlic paste & saute.
- Add tomato & saute.
- Add curry leaves & saute.
- Add turmeric powder & saute.
- Add potatoes & mix well.
- Add coriander, garam masala powder, salt to taste & mix well.
- Add 1/2 glass of water & mix well. Turn off the flame & add salt to taste if needed.
- Add coriander leaves & mix well.
- Roll the dough & cut into equal pieces.
- Roll the dough piece, dust some flour & make puri.
- Heat oil in a cooking pot.
- Put puri one by one & fry until golden brown.
- Serve hot with Baji.
