GREEN CORIANDER ACHAAR | HARE DHANIYE KA ACHAAR | ACHAAR RECIPES BY AYESHA'S WORLD

INGREDIENTS:
  1. Green Coriander - 1 Bunch
  2. Whole Dry Red Chilli - 20-25
  3. Tamarind - 10 gms
  4. Garlic Cloves - 25-30
  5. Mustard Seeds - 1 tbsp
  6. Fenugreek Seeds - 1/2 tsp
  7. Urad Dal - 1 tbsp
  8. Chana Dal - 1 tbsp
  9. Carom Seeds - 1/2 tsp
  10. Coriander Seeds - 1 tbsp
  11. Salt - To Taste
  12. Oil - 4 tbsp
  13. Oil - 2 Spoon
FOR TEMPERING:
  1. Asafoetida - 1/2 tsp
  2. Curry Leaves - 4 Sprigs
  3. Cumin & Mustard Seeds - 1 tbsp
  4. Chana & Urad Dal - 1 tbsp
  5. Garlic Cloves - 6-7
  6. Whole Dry Red Chilli - 4-5
METHOD:
  1. Heat oil - 2 tbsp in a karahi. Add whole dry red chilli & saute, once sauteed for 3-4 mins, take it out.
  2. Add garlic cloves & saute. Add all the ingredients (5-10) & saute. Take them out & mix with sauteed whole dry red chilli.
  3. Add oil - 2 tbsp in the same karahi. Add green coriander & saute. Put the lid & saute.
  4. Add tamarind & saute. Turn off the flame & keep aside. Let it cool down at room temperature.
  5. Take a mixer jar, add all sauteed ingredients & grind it.
  6. In the same jar, add sauteed green coriander, salt to taste & grind.
  7. Heat oil in a karahi. Add asafoetida & saute. Add the tempering & saute.
  8. Add grounded coriander leaves & saute.
  9. Serve with Rice & Roti.
