METHOD:
GREEN CORIANDER ACHAAR | HARE DHANIYE KA ACHAAR | ACHAAR RECIPES BY AYESHA'S WORLD
- PREPARATION TIME: 15 Mins

- Green Coriander - 1 Bunch
- Whole Dry Red Chilli - 20-25
- Tamarind - 10 gms
- Garlic Cloves - 25-30
- Mustard Seeds - 1 tbsp
- Fenugreek Seeds - 1/2 tsp
- Urad Dal - 1 tbsp
- Chana Dal - 1 tbsp
- Carom Seeds - 1/2 tsp
- Coriander Seeds - 1 tbsp
- Salt - To Taste
- Oil - 4 tbsp
- Oil - 2 Spoon
FOR TEMPERING:
- Asafoetida - 1/2 tsp
- Curry Leaves - 4 Sprigs
- Cumin & Mustard Seeds - 1 tbsp
- Chana & Urad Dal - 1 tbsp
- Garlic Cloves - 6-7
- Whole Dry Red Chilli - 4-5
- Heat oil - 2 tbsp in a karahi. Add whole dry red chilli & saute, once sauteed for 3-4 mins, take it out.
- Add garlic cloves & saute. Add all the ingredients (5-10) & saute. Take them out & mix with sauteed whole dry red chilli.
- Add oil - 2 tbsp in the same karahi. Add green coriander & saute. Put the lid & saute.
- Add tamarind & saute. Turn off the flame & keep aside. Let it cool down at room temperature.
- Take a mixer jar, add all sauteed ingredients & grind it.
- In the same jar, add sauteed green coriander, salt to taste & grind.
- Heat oil in a karahi. Add asafoetida & saute. Add the tempering & saute.
- Add grounded coriander leaves & saute.
- Serve with Rice & Roti.
