- Lady Fingers - 1/2 Kg (Wash it, wipe it with a cloth, dry it & cut into small pieces)
- Potatoes - 3 (Cut into small pieces)
- Onion - 1 (12 - Chopped & 1/2 - Sliced)
- Ginger Garlic Paste - 1/2 tsp
- Turmeric Powder - 1/2 tsp
- Red Chilli Powder - 1 tsp
- Grounded Coriander Powder - 1 tsp
- Garam Masala Powder - 1/4 tsp
- Mongo/Amchur Powder - 1/4 tsp
- Green Chillies - 3 (Slited)
- Mustard Seeds - 1 tsp
- Cumin Seeds - 1 tsp
- Carom Seeds - 1 Pinch
- Curry Leaves - Few
- Green Coriander - Few (Chopped)
- Salt - To Taste
- Oil - 1 Spoon
- Heat a pan, add oil, add potatoes & shallow fry them.
- Add all ingredients (11-14) & saute.
- Add onion & saute.
- After a min, add green chillli & saute.
- Add ginger-garlic paste & saute.
- Add lady fingers & saute for a min on high flame. Cover & cook.
- After 2 mins, add turmeric powder, red chilli powder & saute.
- On medium-low flame, add grounded coriander powder & mix well. Cover & cook on low flame.
- After 5 mins, add fried potatoes & mix well. Add salt & mix well.
- Add garam masala powder & mix well. Cover & cook on low flame for another 5 mins.
- Add green coriander & mix well. Cover & cook on low flame for another 5 mins.
- Serve hot.
