INGREDIENTS:
  1. Lady Fingers - 1/2 Kg (Wash it, wipe it with a cloth, dry it & cut into small pieces)
  2. Potatoes - 3 (Cut into small pieces)
  3. Onion - 1 (12 - Chopped & 1/2 - Sliced)
  4. Ginger Garlic Paste - 1/2 tsp
  5. Turmeric Powder - 1/2 tsp
  6. Red Chilli Powder - 1 tsp
  7. Grounded Coriander Powder - 1 tsp
  8. Garam Masala Powder - 1/4 tsp
  9. Mongo/Amchur Powder - 1/4 tsp
  10. Green Chillies - 3 (Slited)
  11. Mustard Seeds - 1 tsp
  12. Cumin Seeds - 1 tsp
  13. Carom Seeds - 1 Pinch
  14. Curry Leaves - Few
  15. Green Coriander - Few (Chopped)
  16. Salt - To Taste
  17. Oil - 1 Spoon
METHOD:
  1. Heat a pan, add oil, add potatoes & shallow fry them.
  2. Add all ingredients (11-14) & saute.
  3. Add onion & saute.
  4. After a min, add green chillli & saute.
  5. Add ginger-garlic paste & saute.
  6. Add lady fingers & saute for a min on high flame. Cover & cook.
  7. After 2 mins, add turmeric powder, red chilli powder & saute.
  8. On medium-low flame, add grounded coriander powder & mix well. Cover & cook on low flame.
  9. After 5 mins, add fried potatoes & mix well. Add salt & mix well.
  10. Add garam masala powder & mix well. Cover & cook on low flame for another 5 mins.
  11. Add green coriander  & mix well. Cover & cook on low flame for another 5 mins.
  12. Serve hot.
