TURAI KI CHUTNEY | TRY KIJIYE TURAI KI NAYI AUR MAZEDAAR RECIPE | CHUTNEY RECIPES BY AYESHA'S WORLD

INGREDIENTS:
  1. Ridge Gourd - 2 (Chopped)
  2. Dry Coconut - 1 Small Piece (Sliced)
  3. Peanuts - 2 tbsp
  4. Garlic Cloves - 8-10
  5. Green Chillies - 10-12
  6. Tamarind - Handful
  7. Curry Leaves - 2 Sprigs
  8. Cumin Seeds - 1 tsp
  9. Green Coriander - Few
  10. Salt - To Taste
  11. Oil - 4 tbsp
FOR TEMPERING:
  1. Bengal Gram - 1 tsp
  2. Urad Dal - 1 tsp
  3. Cumin Seeds - 1 tsp
  4. Mustard Seeds - 1 tsp
  5. Coriander Seeds - 1 tsp
  6. Curry Leaves - Few
  7. Whole Dry Red Chilli - 1
  8. Oil - 1 tbsp
METHOD:
  1. Heat oil in a pan. Add dry coconut, peanuts & saute. Saute on medium-low flame.
  2. Add garlic cloves & saute.
  3. Add green chilies & saute.
  4. Add cumin seeds & saute.
  5. Add tamarind & saute. Take it out on a plate.
  6. Add curry leaves & saute. After a min, take it out.
  7. Add oil, ridge gourd & saute. Saute on high flame, put the lid & cook for 5 mins on medium-low flame.
  8. After 5 mins, add green coriander, keep it aside to cool down at room temperature.
  9. When it gets tender, turn off the flame.
  10. Take a mixer jar, add all sauteed ingredients except for ridge gourd, salt & grind it together.
  11. Add a little water & grind it.
  12. Add sauteed ridge gourd & grind it again into a paste.
  13. Take a bowl, transfer chutney into it, add a little water & mix well.
  14. Heat a tempering spoon, add oil, tempering ingredients (1-5) & saute.
  15. Add curry leaves, whole dry red chilli & saute.
  16. Turn off the flame, add hot tempering into the chutney.
  17. Serve hot.
