METHOD:
KOFTA BIRYANI | CHICKEN KOFTA BIRYANI | BIRYANI RECIPES BY AYESHA'S WORLD
- PREPARATION TIME: 15 Mins
- COOKING TIME: 25-30 Mins
- SERVINGS: 3-4
- Basmati Rice - 1 Kg (Soak in water for 10-15 mins)
- Fried Potatoes - 4 (Cut into medium pieces)
- Fried Onions/Bilista - 1 (Sliced)
- Onions - 2 Big (Sliced)
- Tomatoes - 3 (Sliced)
- Green Chillies - 4-5
- Green Coriander - Few
- Mint Leaves - Few
- Curd - 1 tbsp
- Caraway Seeds - 1 tsp
- Cumin Seeds - 1 tsp
- Oil - 4 Spoon
FOR GRAVY:
- Ginger Garlic Paste - 1 tbsp
- Turmeric Powder - 1/4 tsp
- Red Chilli Powder - 1 1/2 tbsp
- Coriander Powder - 3 tbsp
- Biryani-Pulao Masala - 1 tbsp
- Garam Masala Powder - 1/2 tsp
- Curd - 200 gms
- Any Food Colour - As Required (Mix it with milk)
- Salt - To Taste
FOR KOFTAS:
- Chicken - 3 Breasts & 2-3 soft pieces
- Ginger Garlic Paste - 1 1/2 tsp
- Turmeric Powder - 1/2 tsp
- Red Chilli Powder - 1 1/2 tsp
- Coriander Powder - 1 tsp
- Garam Masala Powder - Less than 1/4 tsp
- Salt - To Taste
- Onion - 1/2 (Cut into medium cubes)
- Green Chillies - 3
- Green Coriander - Few
- Take a bowl to add all the ingredients of FOR KOFTAS (1-7) & mix well. Take a mixer jar & grind it. Add the rest ingredients from FOR KOFTAS (8-10) in the grounded chicken & grind well.
- Transfer grounded chicken into a plate, add curd & mix well.
- Take some amount, roll against palms & give shape.
- Heat a handi, add oil, caraway seeds, cumin seeds & saute.
- Add onion & saute.
- After 2-3 mins of sauteing, add green chillies & saute.
- Add ginger-garlic paste & saute.
- Add tomatoes & saute. Add a little salt & mix. Put the lid & simmer.
- After 1-2 mins, add all ingredients from FOR GRAVY (2-6), a little water & mix well.
- After 2-3 mins of sauteing, add curd & mix well. Saute on low flame.
- Add green coriander & saute.
- When the oil starts separating, add 1/2 glass of water, turn the flame to high & let it simmer/boil.
- Put koftas one by one in the gravy. Do not mix. Put the lid & let it cook.
- After 5 mins, turn koftas to the other side & mix well. Put the lid & let it cook.
- For layering: Add potatoes, put rice, add fried onion, add mint leaves, green coriander, food colour. Continue with the same procedure, put the lid & cook for another 5-6 mins.
- Serve hot with Dahi Kachumbar.
