KOFTA BIRYANI | CHICKEN KOFTA BIRYANI | BIRYANI RECIPES BY AYESHA'S WORLD

INGREDIENTS:
  1. Basmati Rice - 1 Kg (Soak in water for 10-15 mins)
  2. Fried Potatoes - 4 (Cut into medium pieces)
  3. Fried Onions/Bilista - 1 (Sliced)
  4. Onions - 2 Big (Sliced)
  5. Tomatoes - 3 (Sliced)
  6. Green Chillies - 4-5
  7. Green Coriander - Few
  8. Mint Leaves - Few
  9. Curd - 1 tbsp
  10. Caraway Seeds - 1 tsp
  11. Cumin Seeds - 1 tsp
  12. Oil - 4 Spoon
FOR GRAVY:
  1. Ginger Garlic Paste - 1 tbsp
  2. Turmeric Powder - 1/4 tsp
  3. Red Chilli Powder - 1 1/2 tbsp
  4. Coriander Powder - 3 tbsp
  5. Biryani-Pulao Masala - 1 tbsp
  6. Garam Masala Powder - 1/2 tsp
  7. Curd - 200 gms
  8. Any Food Colour - As Required (Mix it with milk)
  9. Salt - To Taste
FOR KOFTAS:
  1. Chicken - 3 Breasts & 2-3 soft pieces
  2. Ginger Garlic Paste - 1 1/2 tsp
  3. Turmeric Powder - 1/2 tsp
  4. Red Chilli Powder - 1 1/2 tsp
  5. Coriander Powder - 1 tsp
  6. Garam Masala Powder - Less than 1/4 tsp
  7. Salt - To Taste
  8. Onion - 1/2 (Cut into medium cubes)
  9. Green Chillies - 3
  10. Green Coriander - Few
METHOD:
  1. Take a bowl to add all the ingredients of FOR KOFTAS (1-7) & mix well. Take a mixer jar & grind it. Add the rest ingredients from FOR KOFTAS (8-10) in the grounded chicken & grind well.
  2. Transfer grounded chicken into a plate, add curd & mix well.
  3. Take some amount, roll against palms & give shape.
  4. Heat a handi, add oil, caraway seeds, cumin seeds & saute.
  5. Add onion & saute.
  6. After 2-3 mins of sauteing, add green chillies & saute.
  7. Add ginger-garlic paste & saute.
  8. Add tomatoes & saute. Add a little salt & mix. Put the lid & simmer.
  9. After 1-2 mins, add all ingredients from FOR GRAVY (2-6), a little water & mix well.
  10. After 2-3 mins of sauteing, add curd & mix well. Saute on low flame.
  11. Add green coriander & saute.
  12. When the oil starts separating, add 1/2 glass of water, turn the flame to high & let it simmer/boil. 
  13. Put koftas one by one in the gravy. Do not mix. Put the lid & let it cook.
  14. After 5 mins, turn koftas to the other side & mix well. Put the lid & let it cook.
  15. For layering: Add potatoes, put rice, add fried onion, add mint leaves, green coriander, food colour. Continue with the same procedure, put the lid & cook for another 5-6 mins.
  16. Serve hot with Dahi Kachumbar.
